Diabetes-Friendly Breakfast: Frittata recipe – Sweet Life

Wondering how to make your morning eggs as nutritious as possible? We’ve got the diabetes-friendly Frittata recipe for you!

Omelette recipe

Serves: 4

Ingredients:

1 cup chopped onions

Olive oil

1 cup chopped sweet potato

1 cup finely chopped broccoli 

6 eggs

Salt and pepper, to taste

Method:

Cook onions on medium heat in olive oil until soft. Add a sprinkle of salt to encourage browning.

Stir in sweet potato and broccoli, and coat with the oil. Cook for about 5 minutes.

Allow to cool to room temperature.

Whisk eggs in a bowl. Add veg to the eggs and mix well.

Heat oil in a non-stick pan, and gently add egg mix.

Cover and cook over low heat until almost firm on top.

Finish off under the grill.

Top tip:

You can use different kinds of veggies – beans, baby potatoes or butternut instead of sweet potato, carrots, courgettes, leeks, kale or spinach instead of broccoli. Just keep the amount the same (2 cups).
