Diabetes-friendly breakfast: Shakshuka – South Africans with Diabetes

Looking for a diabetes-friendly breakfast recipe? Here’s one that’s easy, tasty and low carb.

Shakshuka recipe

Serves: 4

Ingredients:

2 onions, roughly chopped

2T olive oil

1t salt

1t cumin seeds

2t cumin powder

1t turmeric 

1t chilli flakes/smoked paprika (optional)

2 cans chopped tomato

4 eggs 

Parsley to serve

Greens like rocket and wilted spinach (optional)

Method:

Cook onions in oil with salt until browned.

Add cumin seeds. After 1 minute, add cumin powder and turmeric.

Add chilli/smoked paprika, if using.

Add tomatoes and bring to a simmer. Reduce until it’s not too runny, then lower heat.

Crack one egg at a time into a mug. Make a little hole in the tomato mix and pour egg into the hole. Repeat.

Cover with a lid and check until egg is cooked through.

Sprinkle with parsley and serve with greens, if you wish.

Top tip:

Use chickpeas instead of eggs and stir through the tomato sauce. This will not be as low carb! 1 cup chickpeas has about 49g carbs.
