Diabetes-Friendly Dinner: Chimichurri with Whole Braaied Veg

Chimichurri with Whole Braaied Veg recipe

Serves: 4

Chimichurri ingredients:

½ cup green leaves 

¼ cup fresh herbs (parsley or basil)

2t origanum

½ cup olive oil

3T red wine vinegar

Salt and pepper, to taste

1 clove of garlic, crushed

Pinch of dried red chilli (optional)

4 courgettes

2 aubergines 

2 red peppers

Other veg to braai or roast (at 180°C): Onions, tomatoes, and/or carrots tossed in a little oil.

Method:

Blend all the ingredients together roughly. 

Taste and adjust salt and pepper.

Braai or roast the veg whole. 

Serve the veg with the chimichurri.

Top tip:

Add even more flavour by adding onion, lemon zest, feta or rocket to the chimichurri.
