Diabetes-friendly lunch: Asian Slaw – Sweet Life

Looking for a diabetes-friendly lunch recipe? Try this easy Asian Slaw – just mix together and eat!

Asian Slaw recipe

Serves: 4

Slaw ingredients:

2 cups red cabbage, finely sliced

1 cup green cabbage, finely sliced

1 cup carrots, peeled and grated

½ cup spring onions, chopped

Sprinkling of sesame seeds

1 cup chopped coriander

Asian dressing ingredients:

3cm piece of ginger, grated

½ cup soya sauce 

100ml vinegar (rice wine/apple cider)

1.5t sesame oil

Method:

Mix cabbage, carrots and spring onions in a bowl.

Mix ingredients for dressing and let it rest for 30 minutes.

Add dressing to cabbage and massage gently.

Add sesame seeds and coriander.

Top tip:

Switch out the soya sauce for tamari for a deeper, richer flavour.
