Diabetes-Friendly Lunch: Broccoli and Mushroom Soup

Broccoli and Mushroom Soup recipe

Serves: 4

Ingredients:

1 onion, chopped

Salt and pepper, to taste

2-3 cups mushrooms, chopped

1 large potato, peeled and chopped

2-3 cups broccoli, chopped

1L chicken/veg stock

1T olive oil

Method:

Heat olive oil, add onion, and cook until soft.

Add mushrooms and pepper, and cook on medium heat for 2 minutes.

Add potato and cook for 3 minutes.

Add ½ the broccoli and the warmed stock.

Cover and cook for 15 minutes until all the vegetables are soft.

Add remaining broccoli and blend until smooth.

Add salt as needed.

Top tip:

Add a drizzle of cream or milk at the end, or stir in after blending, for an extra creamy soup.
