Honey Cookies recipe
Makes: 15
Ingredients:
½ cup coconut oil, melted
3T honey
Pinch of salt
1 cup desiccated coconut
⅔ cup flour
½ cup whole oats
½t vanilla essence (optional)
50ml warm water
2 eggs
Method:
Preheat oven to 180°C.
Mix honey and oil, then add to dry ingredients and warm water.
Stir in eggs.
Line a baking tray with baking paper.
Roll small balls and place them on tray, pressing down and shaping gently with a fork.
Bake for 15-20 minutes, until golden.
Top tip:
Add 4T cocoa powder for chocolate cookies, or ½ cup sunflower, chia or flaxseed for seed cookies!
