Turkey and Veggie Stir-Fry

This turkey and vegetable stir-fry is a colorful, nutrient-dense meal that’s big on flavor and balanced in nutrition. Lean ground turkey, vibrant vegetables, and a tangy-sweet sauce come together over a bed of hearty brown rice. With a smart mix of protein, fiber, and healthy fats, it’s a great option for blood glucose stability and diabetes-friendly eating. This is a DASH (Dietary Approach to Stop Hypertension) and low carb recipe.

Serving size: 3 oz turkey, 1 cup veggies, 1/2 cup rice


Ingredients

  • 2 tbsp coconut aminos
  • 3 tbsp avocado oil
  • 1 tbsp sugar-free maple syrup with monk fruit
  • 1 tbsp lime juice
  • 1 pinch chili flakes
  • 12 oz lean ground turkey
  • 2 cloves garlic (finely chopped)
  • 1 large zucchini (sliced into half moons)
  • 1 cup carrots (shredded)
  • 4 cups kale (chopped)
  • 2 cups brown rice (cooked)
  • 1/4 cup unsalted roasted peanuts (chopped)

Instructions

  1. In a small bowl, mix 2 Tbsp coconut aminos, 1 Tbsp avocado oil, 1 Tbsp sugar-free maple syrup, 1 Tbsp lime juice, and 1 pinch chili flakes until combined. Set aside.
  2. Heat a large skillet over medium heat and add 2 Tbsp avocado oil. Once hot, stir in the ground turkey and chopped garlic. Cook while stirring occasionally until the turkey is browned and cooked through, about 8–10 minutes.
  3. Add zucchini and carrots to the turkey mixture. Cook for 2–3 minutes, stirring to combine. Add kale and cook for an additional 1–2 minutes until it begins to soften.
  4. Pour the prepared stir-fry sauce over the mixture and stir well. Cook for another 2 minutes to ensure everything is evenly coated and the kale is fully wilted.
  5. Serve the stir-fry over rice and sprinkle peanuts on top for a crunchy garnish.
